Frosted Lemon Drop Cookies

Lemon Drop Cookies

  • 1/2 cup Butter Softened
  • 3/4 cup Sugar
  • 1 Egg
  • 3-4 tbsp Fresh Lemon Juice
  • 1 tbsp Lemon Zest
  • 2 cup Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt

Lemon Drop Frosting

  • 1/2 cup Butter Softened
  • 4 cup Powdered Sugar
  • dash Salt
  • 1 tbsp Lemon Zest
  • 4-5 tbsp Lemon Juice


Cookie Directions

  • Cream butter and sugar together in a mixing bowl. Add egg. Mix until fully incoporated.
  • SIft flour, baking powder and salt. Add half to cookie mixture. Mix. Add remaining flour mixture. Mix until incoporated.
  • Using a small cookie scoop, roll 1/4 inch balls and add to cookie sheet.
  • Lightly press each cookie flat with the bottom of a glass.
  • Bake at 350 for approximately 9 minutes. Remove from oven when the edges begin to lightly brown.
  • Let sit 3-4 minutes on sheet, then remove to cooling rack. Allow cookie to cool completely before frosting.

Icing Directions

  • Add all ingredients to the mixing bowl and beat until it is the consistency desired. Add more lemon juice as needed for desired consistency. Add additional Lemon Zest if a stronger lemon flavor is desired.
  • Frost cookies with a knife or use piping bag and tip to create a design.
