Frosted Lemon Drop Cookies
Lemon Drop Cookies
- 1/2 cup Butter Softened
- 3/4 cup Sugar
- 1 Egg
- 3-4 tbsp Fresh Lemon Juice
- 1 tbsp Lemon Zest
- 2 cup Flour
- 1 tsp Baking Powder
- 1/4 tsp Salt
Lemon Drop Frosting
- 1/2 cup Butter Softened
- 4 cup Powdered Sugar
- dash Salt
- 1 tbsp Lemon Zest
- 4-5 tbsp Lemon Juice
Cookie Directions
Cream butter and sugar together in a mixing bowl. Add egg. Mix until fully incoporated.
SIft flour, baking powder and salt. Add half to cookie mixture. Mix. Add remaining flour mixture. Mix until incoporated.
Using a small cookie scoop, roll 1/4 inch balls and add to cookie sheet.
Lightly press each cookie flat with the bottom of a glass.
Bake at 350 for approximately 9 minutes. Remove from oven when the edges begin to lightly brown.
Let sit 3-4 minutes on sheet, then remove to cooling rack. Allow cookie to cool completely before frosting.
Icing Directions
Add all ingredients to the mixing bowl and beat until it is the consistency desired. Add more lemon juice as needed for desired consistency. Add additional Lemon Zest if a stronger lemon flavor is desired.
Frost cookies with a knife or use piping bag and tip to create a design.
