Brown Butter Toasted Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 cup butter
  • 3 cups oatmeal
  • 1 egg
  • 2 tsp vanilla
  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup semi sweet chocolate chips
  • 1/2 cup cinnamon chips
  • 1/4 cup dark chocolate chips

Instructions

  • Melt butter in a pan on medium heat and stir with a whisk until brown foam surfaces. Approximately 5- 7 minutes.
  • Add oatmeal. Incoporate oatmeal with butter. Allow oatmeal to brown. Constantly stir so it does not burn. Approximately 4-5 minutes. Remove from heat.
  • Allow oatmeal butter mixture to cool completely..
  • Preheat oven to 350 degrees.
  • Mix egg, sugar and vanilla together. Add flour, baking soda, salt and cinnamon. Mix until incoporated.
  • After the oatmeal/butter mixture has cooled completely, add to the mixture and incoporate.
  • Add cinnamon chips, semi-sweet chocolate chips, and dark chocolate chips and mix for 10 seconds.
  • Using the scoop of your choice, scoop cookies onto cookie sheet. Add a few dark chocolate chips to the top of the cookie ball.
  • Bake for 11-13 minutes, until edges are slightly brown. Adjust time based on the size of your cookie scoop. (I used an ice cream scoop).
  • Allow cookies to cool on the cookie sheet.
