Brown Butter Toasted Oatmeal Chocolate Chip Cookies

- 1 cup butter
- 3 cups oatmeal
- 1 egg
- 2 tsp vanilla
- 1 cup brown sugar
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 cup semi sweet chocolate chips
- 1/2 cup cinnamon chips
- 1/4 cup dark chocolate chips
Melt butter in a pan on medium heat and stir with a whisk until brown foam surfaces. Approximately 5- 7 minutes.
Add oatmeal. Incoporate oatmeal with butter. Allow oatmeal to brown. Constantly stir so it does not burn. Approximately 4-5 minutes. Remove from heat.
Allow oatmeal butter mixture to cool completely..
Preheat oven to 350 degrees.
Mix egg, sugar and vanilla together. Add flour, baking soda, salt and cinnamon. Mix until incoporated.
After the oatmeal/butter mixture has cooled completely, add to the mixture and incoporate.
Add cinnamon chips, semi-sweet chocolate chips, and dark chocolate chips and mix for 10 seconds.
Using the scoop of your choice, scoop cookies onto cookie sheet. Add a few dark chocolate chips to the top of the cookie ball.
Bake for 11-13 minutes, until edges are slightly brown. Adjust time based on the size of your cookie scoop. (I used an ice cream scoop).
Allow cookies to cool on the cookie sheet.
